Lemon Squares
I got this recipe from my Dutch friend Willy when I lived in Israel. It is easy to make and very tasty. So tasty in fact, that my hubby requested them for his 60th birthday in 2010.

1 1/2 cups flour
1/2 cup sugar
3/4 cup margarine |
- Mix all ingredient in food processor with short on-off burst until crumbly.
- Press mixture into the bottom of a 9×13 inch ungreased baking pan and bake for 15 minutes or untill the edges are slightly browned.

4 eggs
grated rind of 1 lemon
1/4 cup lemon juice
1 cup sugar
4 TBSP flour
1/4 tsp salt |
- Mix all ingredients together in food processor
- Slowly spoon onto hot crust
- Return to oven and bake 20 minutes or longer until set.
- Let cool and sprinkle with icing sugar and cut into bars.
