Pancakes (milk & egg-free)

When my kids were younger they had allergies to all kinds of things and I had to look for alternative recipes. This is one of them. I still use it as the pancakes are very tasty and easy to make. I never liked the bought mixes.

  • Recipe is for 4
  • 2 cups flour
  • 4 tsp baking powder
  • ½ tsp salt
  • 2 Tbsp sugar
  • mix all dry ingredients with a fork
  • ½ tsp vanilla extract
  • 3 Tbsp oil
  • 1½-2 cups water
  • add vanilla extract and oil
  • then add part of the water and mix
  • keep on adding water until the batter looks right, not too runny and not too thick
  • cook on a hot pan or griddle

Note:

  • 1 cup fruit (blueberries, strawberries or other berry or fruit) or nuts may be added for variety
  • substitute part of the regular flour with another flour
  • Recipes is easily halfed or doubled.
