Matzo Balls

One of my family’s favorite meals are chicken soup with Matzo Balls. As my family loves the matzo balls I usually make 1½ times the amount of the recipe.

  • 2 eggs
  • ½ cup chicken soup
  • 1/3 cup oil
  • ½ tsp salt
  • pepper to taste
  • mix all ingredients well. I use my immersion blender
  • 1 cup matzo meal
  • add and mix well
  • let stand for 20 minutes
  • bring chicken soup to a boil
  • add plumsized matzo balls (I rinse my hands under cold water and then take a tablespoonful of the mixture and form it into a ball and drop them into the boiling soup)
  • simmer for 20 minutes
